Eryngium

Eryngium (Sea Holly) is the plant equivalent of a firework: spiky, architectural, and absolutely brilliant for adding texture and structure to borders. Its thistle-like flowers in metallic blues, silvers and steely purples sit above tough, often silvery foliage, creating a bold, modern look that also works beautifully in cottage and prairie-style planting. Eryngium is drought tolerant once established, thrives in poor, well-drained soils, and is a magnet for bees and other pollinators. It’s also a favourite for cutting and drying – the blooms hold their colour and shape brilliantly, so you get months of enjoyment in vases too.
